Here’s an easy summertime meal that’s loaded with flavor and protein, Quinoa, Lentil and Black Bean Burrito Bowl!
I love it when I stumble upon an easy recipe that uses a few key ingredients and can be thrown together quickly. To me, that’s the perfect summertime recipe. This Quinoa, Lentil and Black Bean Burrito Bowl is one of those recipes. Simple ingredients that deliver amazing flavor. A can of black beans, a half package of dried lentils, an onion, a red pepper, fresh chopped spinach and quinoa. All delicious by themselves but combined – fantastic!

They’re simply deconstructed burritos without the tortilla. Eliminating the tortilla makes this dish lower in carbohydrates and calories. It’s also gluten free, vegetarian and completely healthy.
I try to keep a package of lentils in my pantry at all times. Lentils cook quickly, don’t require soaking and are great to add into salads or to incorporate into other dishes. Since green lentils don’t get mushy like other lentils do when they cook, these are the ones I use most often. I’ve found the best way to cook lentils is to place a cup of rinsed lentils in a pot and add two cups of water, a bay leaf, a clove of garlic and about 1/2 teaspoon of salt. Bring the water to a boil, then reduce the heat to low to continue cooking for about 20 minutes. Taste and add more salt if necessary. The lentils plump up nicely when they’ve cooked. Quinoa is also very easy to make by placing a cup of rinsed quinoa into a pot along with 2 cups of water. Bring to a boil, then lower the heat and cover for about 15 minutes.
After you’ve got your ingredients together, spoon a little of each into a bowl placing each food right beside the next, top with chopped green onions and drizzle a little balsamic vinegar and olive oil over the top.
This dish makes a very pretty showing with all of the ingredients placed in a bowl together but you can also make individual bowls instead.

Quinoa, Lentil and Black Bean Burrito Bowl
Ingredients
- 1 yellow onion , thickly sliced
- 1 red pepper , thickly sliced
- 1 tablespoon olive oil (plus more for drizzling)
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 cups quinoa , cooked
- 2 cups lentils , cooked
- 1 can black beans , rinsed and drained
- 1 cup fresh baby spinach , chopped
- 1/4 cup green onions , chopped
- balsamic vinegar
Instructions
- Heat oven to 425 degrees F.
- Spread the onion slices and red pepper slices evenly on a large baking sheet. Drizzle with the olive oil, salt and pepper. Mix with your hands.
- Bake in the oven for 25 minutes. Remove from the oven and set aside.
- TO PREPARE THE BURRITO BOWL
- Spoon each of the ingredients side by side onto the plate or bowl.
- Top with 1/4 cup chopped green onions
- Drizzle with olive oil and balsamic vinegar.
