These rich and buttery Double Chocolate Mint Scones remind me of Thin Mint cookies.  They’re perfect for dunking in your morning coffee or to enjoy with your afternoon tea…

When I made these Double Chocolate Mint Scones last week, I was completely reminded of the flavors in Thin Mints.

Buttery and rich, these chocolate scones have a double dose of chocolate in them.  In addition to the cocoa powder, they’re studded with handfuls of rich chocolate chunks.  Chocolate, more chocolate and mint is not a bad combination, if you ask me.  In fact, it’s pretty perfect!

While the ever popular Thin Mint cookies were my inspiration for these delicious scones, you’ll find that they aren’t nearly as sweet. They’re just as a scone should be with a moist crumb and crumbly edges.

I used Guittard mint chips because I love the strong mint flavor, but feel free to use any mint chips you can find.

These rich and buttery Double Chocolate Mint Scones are perfect for dunking in your morning coffee or to enjoy with your afternoon tea...

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 3 tablespoons granulated sugar
  • 1/2 cup butter
  • 1/2 cup milk
  • 1 egg
  • 1 cup chocolate chips
  • 3/4 cup mint chips

Instructions

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment.
  • In a mixing bowl, stir together the flour, cocoa powder, baking powder, salt, baking soda and sugar.
  • Using a pastry blender or two knives, cut the butter into the flour mixture until mixture looks like coarse crumbs.
  • In a small bowl, whisk together the milk and egg. Pour into mixing bowl and stir until just combined.
  • Stir in the chips.
  • Turn the dough out onto a lightly floured work surface. Knead very lightly and form into an 8-inch circle. (Add a little more flour to the dough if the dough becomes too sticky to handle)
  • Cut the dough into 8 wedges.
  • Place the wedges onto the prepared baking sheet. Bake for 12-15 minutes or until golden brown.
  • Let cool on baking sheet for a minute or so, then transfer onto a wire rack.

  1. These look over-the-top decadent in the best possible way! The only girl scout cookie I really ever cared about was the thin mint.

  2. Scones are one of my very favorite treats! I was brainstorming new scone recipes today and yours sounds amazing!

  3. I’m a scone fanatic and thin mints bring back such wonderful memories. The combination of the buttery pastry and the chocolate mint flavor is bound to be a winner. While it does seem a bit wicked to eat it for breakfast, if it’s called a scone, I do believe that it’s fair game for breakfast, don’t you?

    1. In my mind, it’s perfect for breakfast, Laura. I love scones with my morning coffee and am crazy about the chocolate and mint combination.

  4. Thin mints are my hubby’s favorite girl scout cookie!! I am a huge fan of Guittard mint chips (okay, Guittard anything) and they would be soooo delicious in this recipe. This looks scrumptious! 🙂

    1. I love the Guittard mint chips, I haven’t found a chip that has a more intense flavor.

  5. Mint chips are hard to find, thanks for the tip on where to find them. Ps. I love amazon!

  6. I have never been a huge mint fan, but thin mints are always so good so I am sure I would love these! I live on a little cul de sac and I am really hoping they don’t decide to extend our street through with the new housing development 🙁

    1. I hope they don’t either Kacey. We never know these things when we’re first moving into our homes. Years later we find out extending the street was part of the grand plan. Cul de sacs are perfect when you have little ones.

  7. You had me at, “…I was completely reminded of the flavors in Thin Mints.” These sound seriously amazing, I never thought to make chocolate mint scones! Those green mint chips give such a nice color pop!

  8. Our neighborhood has gone through several changes. For awhile all the kids grew up and moved out and now we are on a second batch of 20-somethings with kids in our neighborhood!
