We love quesadillas around our house. They’re such a fun alternative to a sandwich. Somehow, placing cheese and whatever else you can dream of between two flour tortillas just seems a little more exciting.
A quesadilla is simply a flour or corn tortilla filled with cheese and other savory ingredients and either folded over or cut into triangles.
Yesterday, Elizabeth was home for lunch and I made her a Spinach and Brie Quesadilla.
Spinach and brie go so well together. When the brie is heated, it melts so easily and tastes wonderful.
Elizabeth enjoyed this for her lunch and I ended up making it again for Colleen and Patrick for their after-school snacks.
