One of the benefits of cooking larger meals such as meatloaf or lasagna, is that there are always plenty of leftovers.  I love the convenience of having leftovers for the next day because it leaves me extra time in my day.  I know for college students, that means extra time to study.  Right?  That’s always necessary…

The college student meals that I’ve posted for you this week include a wonderfully tasty Bacon Cheeseburger Meatloaf recipe.  This meatloaf is easy to make and doesn’t require a lot of ingredients.  In fact, you probably have most of the ingredients in your refrigerator already.  The recipe is loosely based on Paula Deen’s Bacon Cheeseburger recipe which has all the delicious flavors of a hearty bacon cheeseburger.  I tried to make this meatloaf a little healthier but believe me, the great taste is all there.  The meatloaf recipe will make enough for two (at least) meals, so a meatloaf sandwich would be a flavorful meal for the next day.

There’s also a recipe for an easy and extremely inexpensive pizza recipe.  I remember years ago, my mom would buy the Jiffy brand pizza dough.  At around 55 cents a box, it’s a real bargain.  I came across a box in the store recently and thought I’d give it a try.  The dough is tasty but sticky to work with.  I’d suggest greasing your hands when spreading the dough on the baking sheet.

I know you’ll love the Twice Baked Cauliflower Casserole.  It’s a lightened up version of a Twice Baked Potato Casserole.  This casserole is full of creamy cheese and crisp pieces of bacon.  It will make enough for two meals, so a nice, green salad or a Sesame Cucumber Salad would be perfect to eat with the leftovers.

MONDAY

Bacon Cheeseburger Meatloaf

Ingredients

1 pound lean ground beef

4 slices cooked bacon

2 lightly beaten eggs

1 cup shredded cheddar cheese

1/4 cup mayonnaise

pinch of salt

1/4 cup finely chopped parsley

1/3 cup ketchup

2 tablespoons stone ground mustard

Directions

Preheat oven to 350 degrees F.

Spray a loaf pan with oil spray and set aside.

In a small bowl, combine the ketchup and mustard and set aside.

In a large bowl, combine  the ground beef, bacon, eggs, cheese, mayonnaise, salt and parsley and mix well.

Press the meat mixture into a 9 by 5 by 3-inch loaf pan, or shape into a loaf and place on a baking pan.

Pour the ketchup-mustard mixture over the top of the meatloaf.

Bake for 40 minutes or until meat is no longer pink.  Let sit for a few minutes before slicing.

TUESDAY

Meatloaf Sandwiches

Ingredients

french bread or bread of your choice

cheese (any kind)

slices of meatloaf

Directions

Preheat the broiler.  Place the cheese on both slices of bread.  Place the bread on a baking sheet and place under the broiler until the cheese begins to melt.  Remove from the oven and place slices of meatloaf on the sandwich.   Add lettuce or mayonnaise if you’d like.

WEDNESDAY

Cheese Pizza

Ingredients

1 box Jiffy pizza crust

1/2 cup tomato sauce

1 cup shredded mozzarella

Directions

Prepare the pizza crust according to the package directions.

Spread the tomato sauce over the crust.  Sprinkle the mozzarella cheese over the sauce.  Bake as directed in the oven.

THURSDAY

Twice Baked Cauliflower Casserole

Ingredients

1 large head of cauliflower

1/2 cup sour cream

1/2 cup heavy cream

1/4 cup minced green onions

1 egg, lightly scrambled

1 cup shredded cheddar cheese, plus additional for topping

6 slices bacon, cooked very crisp and crumbled

FRIDAY

Twice Baked Cauliflower Casserole leftovers and Sesame Cucumber Salad

Ingredients for the salad

1 tablespoon rice wine vinegar

1 teaspoon olive oil

1/2 teaspoon soy sauce

pinch of cayenne pepper

2 cucumbers, cut into 1/4-inch slices

1 teaspoons sesame seeds

Directions

Whisk together the vinegar, olive oil, soy sauce and cayenne pepper in a small bowl.  Drizzle over the sliced cucumbers.  Sprinkle the sesame seeds over the top.

*This salad will keep very well in the refrigerator if you have any leftover.
