I always think of chocolate as such an indulgent treat, don’t you? Well, I’ve got a healthy 3-ingredient treat that will leave you feeling good about what you’re eating and enjoying. Today I’m talking about Chocolate Almond Butter and when you make it yourself, you know exactly what ingredients go into it. Raw almonds, chocolate chips of your choice; semi-sweet, dark or carob, and a teaspoon of coconut oil. Nothing more.
Making peanut butter and almond butter is something I do all the time. It’s so easy to do, it tastes great, and there are no unnecessary fillers or additives involved. We spread it on toast, use it in recipes like these delicious Almond Butter Energy Bites, and eat it right out of the jar with a spoon.
Making almond butter is exactly the same as making peanut butter. Super simple…super easy!
Start with the almonds. Measure out two cups.
Place 1/2 cup of chocolate chips into a small pot on the stove. Add 1 teaspoon of coconut oil and heat on low until the chocolate melts and becomes smooth.
Remove the pot from the stove and set it aside to cool. Next, place the almonds into the base of your food processor, add the lid and turn the machine on. As I mentioned, it takes me about 15 minutes for the almonds to break down completely. They will go through different stages which you’ll be able to see on the video. I’ve condensed the 15 minute process to just under 5 minutes so you can see the stages the almonds go through before they become creamy and smooth.
Look at how creamy….
