Delicious, healthy and Gluten-Free 3-Ingredient Date Bars – only dates, cashews and shredded unsweetened coconut are all you need to make these delectable energy bars.
I can leave it to my husband, EJ to find and bring home wonderful treats from far away lands. Sounds a bit romantic, doesn’t it?
He’s brought home for our kids unique candy bars from England and France, various Japanese sweets and one of my favorite delights, a box of extra thin swiss chocolates. But not all of the treats he brings home or learns about on his business trips are sugary and unhealthy. Sometimes he finds and brings home treats that are actually quite healthy.
Since he travels so much on business, EJ often finds himself either in airports waiting for delayed flights or rushing off the airplane to catch a meeting without stopping for a bite to eat first. Such is the life of a business traveller, I guess. Since traveling can be so unpredictable, EJ knows to bring a little something with him to snack on that will give him energy to keep doing what he’s sent there to do.
A few months ago, I had the opportunity to travel with him on one of his trips to London, as we were packing, EJ handed me a few Larabars to carry in my bag. EJ discovered Larabars at an airport and now brings them from home whenever he travels. The ones he loves contain no added sugar, just dates and cashews.
I was probably one of the few people who had never tried a Larabar and was hesitent at first. I don’t really like “energy” bars or “sports” bars because they remind me of candy bars. They’re usually full of sugar and other fillers. I might as well eat a cookie. But after looking over the Larabar label, there was nothing for me to worry about. So into my bag they went.
The bars were indeed delicious and exactly what I needed at various times throughout our trip. Since they tasted so good and the ingredient list was so simple, I knew I wanted to try to make date bars myself as soon as I returned home.
I played around with the ratios, but eventually settled on 8 ounces of pitted dates, 2 cups of raw cashews and 1/4 cup of unsweetened shredded coconut.
These date bars are so simple to make. I toss everything into my food processor and blend it until it’s smooth and has the consistency of cookie dough…
Press the “date dough” into a pan. I used a 9 x 13-inch baking pan for these pictures and my date bars where thin, which I happen to like. I’ve also made the date bars in 8 x 8-pans and cut them into squares. Either way, they taste the same :).
Chill and slice…
Three ingredients, that’s it! These gluten-free 3 ingredient date bars are easy to make, they taste great and are so good for you. I keep them in my fridge for a healthy after school snack for my kids, a snack after a workout or just when I have a craving for a little something sweet.
3 Ingredient Date Bars
- 8 ounces dates , pitted
- 2 cups raw cashews
- 1/4 cup unsweetened shredded coconut
- Combine the dates, cashews and coconut in a food processor. Pulse a few times to break the ingredients up.
- Process continuously for 20 seconds. Scrape the edges of the bowl to make sure none of the ingredients are sticking to the sides.
- Continue to process until a ball is formed, about 2 minutes.
- Line a baking dish with parchment paper and pour out the date mixture. Spread out the dough by pressing down with your hands. Cover and chill for at least an hour.
- Unwrap the chilled dough and cut into squares or rectangles. Wrap each bar in plastic wrap or wax paper.
- Store in the refrigerator.
