When I was a kid, a favorite childhood memory of mine was when my mom baked cookies and I got to use my finger to swirl around the big bowl and eat up all the leftover cookie dough. I almost think the cookie dough tasted better than the actual cookies. These days, we’re so worried about uncooked eggs and salmonella that my kids haven’t experienced that yummy thrill before. One of their favorite foods however is chocolate chip cookie dough ice cream so they get to indulge that way.
Last week, I told you about my daughter’s 12th birthday when I made a scrumptious strawberry cake with strawberry buttercream frosting. Well, as if that weren’t sweet enough, she also requested not just your standard pancakes for breakfast…nooooo…she wanted chocolate chip cookie dough pancakes and I was more than happy to oblige. This no bake chocolate chip cookie dough is perfect for adding to pancakes.
The little balls of cookie dough are made without eggs so they’re safe to be eaten just as they are. To make my morning easier, I made up a batch the day before, rolled them into little balls and placed them in the fridge to firm up a bit. In the morning, I used my instant pancake mix recipe and mixed up a quick batch of birthday pancakes. While the pancakes were on the griddle, I dropped a few cookie dough balls onto each pancake.
I loved how the cookie dough softened in the pancake when it warmed up from heat of the griddle. It tasted just like a chocolate chip cookie pancake.
There are limitless possibilities for these little cookie dough bites. When rolled into balls, they’re a great little snack when you want something small but sweet and we’ve even put them into homemade vanilla ice cream. When we haven’t rolled them, the dough makes a great dip (just add a spoonful of water at a time until you get the perfect consistency) and use graham crackers to scoop.
- ½ stick butter, softened (4 tablespoons)
- ¼ cup light brown sugar, packed
- 1 tablespoon milk
- ½ teaspoon vanilla
- ½ cup all purpose flour
- ½ cup mini chocolate chips
- Combine the butter and brown sugar in a bowl.
- Add the milk and vanilla and blend.
- Mix in the flour until combined.
- Stir in the chocolate chips.
- Gently roll the dough into little balls and place them on a wax paper lined plate or a baking sheet.
- Place them in the refrigerator to firm.
