I’m so excited to share with you a spectacular Strawberry Cake Recipe I found at Taste of Home.  You might remember that my youngest daughter celebrated her 12th birthday a couple of weeks ago.  The tradition in our family is that our children pick the type of cake they would like for their family party, the cake for their friend party, the type of frosting, the birthday dinner, the birthday breakfast and the list goes on.  Simply put, birthdays are a pretty big deal in our home.

Colleen loves strawberry everything and she asked me for a strawberry cake for her “family” birthday cake.  I took my search to the internet for a cake recipe that was different than anything I’d made before, yet it needed to be simple to make since I didn’t have a lot of time to make it.  Taste of Home came my rescue.

One of the things I love about this particular strawberry cake recipe is that you use a box of white cake mix and add just a couple of ingredients to it.  I have nothing against boxed cake mixes and for the convenience, they can’t be beat.  What is great about this particular strawberry cake recipe is that you add strawberry gelatin and fresh strawberries to give the strawberry cake a robust strawberry flavor.  The other ingredients are simply water, canola oil and eggs.

I made a rich strawberry buttercream frosting that intensified the wonderful flavor of strawberries instead of their suggested whipped cream frosting.  I also added strawberry preserves along with the strawberry buttercream in between the two layers.  Let me tell you, it certainly satisfied Colleen’s craving for strawberries and this recipe is now a keeper for me.    This recipe also calls for using egg whites, which I was a little apprehensive about but did anyway and it lightened the texture of the cake.  One thing I did differently than the recipe called for and I would not recommend this was that I made two layers instead of the suggested three.  My word of advice…make three layers!  The cake layers sink after taking them out the oven to cool, so Colleen’s cake did not stand very tall.  It was luscious and very pretty, just a little short.  I had a little extra batter left over and since my cake pans were filled, I made cupcakes.
