Are you a fan of Pinterest? I certainly am. I go on a couple times a day to see all the wonderful ideas people have posted. There are some very creative folks out there! I usually spend a few minutes early in the morning when the house is quiet to get on and update my boards. I spend a little more time when I’m waiting in the car line to pick up my daughter from school and then again, I find a few minutes before I go to bed to check things out. It can be a serious time-waster…er…I mean…serious source of inspiration. I think I might be a bit addicted because I have to limit my time on the site. I have to say to myself, “step away from the computer…now…Joanie!!” But in reality, I’ve found quite a few great ideas for decorating my home, sprucing up my backyard and unique and interesting foods I’d love to try.
A few weeks ago, I found a recipe that really caught my eye. It was for Mini Deep Dish Pizzas from Dashing Dish. She cut circles out of whole wheat wraps, placed them inside muffin tins, topped them with sauce, cheese and pepperoni and baked them. Brilliant!!
Inspired by her idea, I made these fun little Bean and Cheese Nacho Boats.
Using the top of my can of beans, I cut little circles out of the tortillas.
I pressed each tortilla circle into greased muffin tin. Then, I sauteed the black beans with chopped onions and garlic, cumin and coriander on the stove and spooned a bit of the bean mixture into each tortilla circle. Finally, I topped each one with a hefty sprinkling of cheddar cheese.
After these nacho boats baked, I added chopped tomatoes, cilantro, a dollop of sour cream and guacamole.
These bake up nice and crispy and each bite is bursting with flavor. Top them with any of your favorite toppings and enjoy!
