Set the toaster oven to "Bake" and preheat to 425 degrees F.
Scrub the potato.
Slice the potato lengthwise into 1/4-inch slices, and cut again into 1/4-inch strips. As you cut the potatoes, toss them into a bowl of cold water and let them soak for about ten minutes.
Pat the potato slices dry and toss them in a another bowl.
Add the olive oil, salt and pepper.
Place on the baking tray and cook for 25-30 minutes or until golden.
