Ingredients

olive oil

medium onion
, chopped

garlic

can red beans
, rinsed and drained

can garbanzo beans
, rinsed and drained

can great northern beans
, rinsed and drained

can diced tomatoes

cumin

teaspoon

chili powder

vegetable broth
Instructions
Heat the olive oil in a large pot set to medium high heat.
Add the onions and garlic and cook for 3 minutes or until onions are translucent.
Add the beans and stir.
Mix in the spices and the vegetable broth.
Bring to a boil.
Lower the heat to a simmer and cook for 20 minutes, stirring occasionally.
Top with sour cream, shredded cheddar cheese and serve with tortilla chips, if desired.
