I recently participated in the 2012 Great Food Blogger Cookie Swap and what a blast it’s been! The instructions were pretty simple. I signed up, was assigned three fellow food bloggers from around the country to send each a dozen of my favorite cookies to and in return, I would receive three dozen cookies from other food bloggers. How fun!
Special thanks to Lindsay from Love and Olive Oil and Julie over at The Little Kitchen for putting this whole thing together! What a tremendous task you ladies had in coordinating this. I do hope you guys got in on a little of the cookie action and scored yourselves some cookies too!
I totally scored big this year and was on the receiving end of some fabulous cookies from Stephanie at MunchIMunch, Sarah from Cookcanread and from Laura over at RingFingerTan Line. Thanks, girls!
The cookies I baked to send out were a variation of my F-A-V-O-R-I-T-E cookie in the world! They’re officially called, Laura Bush’s Texas Governor’s Mansion Cookies and being a Texas girl myself, I thought they would be appropriate.
I actually put my own little twist on this recipe to make it a little more festive. I added cranberries, white chocolate and macadamia nuts which I highly recommend doing!
I packaged the cookies in cute little boxes and enclosed a Texas “goodie bag”, with our own, Texas Monthly Magazine, Texas spices and Texas candies. I had such a good time putting it all together to send out.
Texas Governor’s Mansion Cookies – With A Holiday Twist
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon baking soda
- 1 tablespoon ground cinnamon
- 1 teaspoon salt
- 1 ½ cups butter, at room temperature (3 sticks)
- 1 ½ cups granulated sugar
- 1 ½ cups light-brown sugar, packed
- 3 eggs
- 1 tablespoon vanilla
- 3 cups white chocolate chips
- 3 cups old-fashioned rolled oats
- 1 cup cranberries, coarsely chopped
- 2 cups macadamia nuts, chopped
- Heat oven to 350 degrees F.
- Mix the flour, baking powder, baking soda, cinnamon and salt in a bowl.
- In another large bowl, beat the butter on medium speed until smooth and creamy, about 1 minute.
- Gradually beat in the sugars and combine.
- Add the eggs, one at a time, beating after each addition.
- Stir in the vanilla.
- Stir in the flour mixture until just combined.
- Stir in the white chocolate chips, oats, cranberries and nuts.
- For each cookie, drop ¼ cup of dough onto ungreased cookie sheet, space the cookies 3 inches apart.
- Bake for 15-17 minutes, until the edges are lightly browned.
- Remove cookies from the pans and place on racks to cool.
