One thing I discovered when my kids grew up and moved away was that the holidays would never quite be the same. When my kids were in college, they enjoyed coming home for Thanksgiving and Christmas. They went to school within driving distance so it was easy to do. After college, their new career opportunities took them to other parts of the country. Coming home, especially around Thanksgiving wouldn’t be as easy to do.
My husband talks about the Thanksgiving he spent alone in Philadelphia when he was living and working there. He was in his early 20’s and couldn’t make it home to spend the holiday with his family. He says he wanted to make Thanksgiving special, even though he was celebrating by himself. He decided to make lasagna and spent $70 on the ingredients. He remembers the lasagna not being all that great but he was determined to have a home cooked meal on Thanksgiving.
It has taken me a while to get used to serving up a smaller Thanksgiving meal. Actually, I’m not used to it and still feel disappointed if any my kids can’t make it home. So, since I want their holiday to be special too, especially if they are far away, I have created a few recipes that would be special for the season – this Pecan Pie For One is one of these recipes.
This Pecan Pie for one has all the flavors you love in a pecan pie. It’s perfectly sweet, it’s filled with pecans and best of all, it’s easy to make.
Instead of a traditional pie crust, I make a buttery shortbread crust that tastes amazingly good! On top of the crust, I pour the decadent pecan filling.
I bake this mini pecan pie my Le Creuset 5-inch baking dish. The dish is the perfect size for a single serving dessert. I also use a dish that’s slightly larger, and it works well too. For best results, use a baking dish of a similar size.

This Pecan Pie For One has all the flavors you love in a pecan pie. This single serving dessert is made with a buttery shortbread crust and a rich, pecan filled filling.
- 2 1/2 tablespoons unsalted butter
- 2 tablespoons granulated sugar
- 1/4 cup all-purpose flour
- 1 tablespoon cornstarch
- 1/8 teaspoon salt
- 1/4 cup corn syrup
- 1 egg
- 1/4 cup granulated sugar
- pinch of salt
- 1 tablespoon unsalted butter, melted
- 1/2 teaspoon vanilla extract
- 1/3 cup pecans
- Preheat oven to 350 degrees F.
- In a bowl, cream butter and sugar until light and fluffy.
- Add flour, cornstarch and salt. mix until combined.
- Press dough onto bottom of lightly greased 5-inch baking dish.
- Bake 12-15 minutes or until light golden.
- Set aside and prepare filling.
- TO MAKE THE PECAN PIE FILLING
- Mix corn syrup, egg, sugar, salt, butter and vanilla in a bowl using a spoon.
- Stir in the pecans.
- Pour filling over shortbread crust.
- Bake on center rack of oven for 30 minutes.
- Remove from oven and let pie cool on wire rack for a 2 hours.
