I was recently introduced to a great snack that is easy, healthy and perfect for hot days or for times when you need to grab a quick snack. I have to give credit for this recipe to a friend of the family, Kara, who is an amazing college swimmer.  This simple snack is made by cutting up your favorite fruit and then putting the pieces in disposable cup.  Then pour pineapple juice over it, stick a plastic spoon in the center and place it in the freezer.  After a few hours (or overnight!) pull it out for a quick and easy breakfast or afternoon snack. Great, right? I’m going to call it Kara’s Fruit Slush.

I made Kara’s fruit slush the other day using strawberries and banana slices.  I didn’t have any pineapple juice so I used Dole Orange, Peach, Mango juice and it was delicious!  Use your favorite juice and your favorite fruit.  It’s totally easy to make and so fresh tasting! Eat like a popsicle or let it thaw a tiny bit and scoop out.
