The weather’s been so lovely here in Southeast Texas.  We know that the scorching summer heat is right around the corner so my family tries to eat outside as often as we can.   Our evenings have been extremely busy as well, Patrick began Driver’s Ed a couple of weeks ago and his class has been from 6 to 8 every night.  That’s our prime dinner making and serving time.  So,  preparing dinner can be a bit of a challenge.  I’m not really one to make dinner at 2 in the afternoon, so I’ve been trying to make dinners that can be put together easily and will cook quickly.

So, combining the need for efficiency with the desire to be outside, I decided to grill a gorgeous salmon fillet and top it with a sweet mango salsa.

I like to use a cedar plank when grilling salmon.  The plank provides a nice, light smoky flavor.  Just be sure to soak your plank for at least 1 hour fully submerged in water before you use it.

Preheat the grill to medium-high.

Since I wanted to salmon fillet to pick up the wonderful flavors of the mango salsa, I simply drizzled olive oil over both sides of the salmon and sprinkled with about 1/4 teaspoon of salt and 1/4 teaspoon of pepper.

Cook the salmon on the preheated grill for about 15 to 20 minutes.

After the salmon is cooked, remove from the grill.  Slice into desired portions and top with several spoonfuls of the Mango Salsa.

Ingredients

  • 1 Salmon fillet
  • Olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

MANGO AVOCADO SALSA

  • 1 medium mango
  • 1 medium avocado
  • 1/2 cup cilantro , chopped
  • 2 green onions , chopped (white to light green parts only)
  • 1 cup cherry tomatoes , sliced in half

Instructions

  • Soak your plank for at least 1 hour fully submerged in water before you use it.
  • Preheat the grill to medium-high.
  • Drizzle olive oil over both sides of the salmon and sprinkled with about 1/4 teaspoon of salt and 1/4 teaspoon of pepper.
  • Cook the salmon on the preheated grill for about 15 to 20 minutes.
  • After the salmon is cooked, remove from the grill. Slice into desired portions and top with several spoonfuls of the Mango Salsa.
  • FOR THE MANGO AVOCADO SALSA
  • Rinse, peel and dice mango so that you have nice little chunks. Put into a large bowl.
  • Peel the avocado, remove the seed in the center and chop.
  • Add it to the bowl along with the 1/2 cup of chopped cilantro, the chopped green onions the cup of cherry tomatoes and the lime juice.
